This deliciously decadent warm bacon and blue cheese dip is one of our favourite recipes for entertaining.

You can prepare ahead of time and simply pop it in the oven when guests arrive to serve as an appetiser.

Serve with vegetable crudités and grape clusters.

SERVES 4

Ingredients:

  • 4 bacon slices, chopped
  • 2 garlic cloves, minced
  • 250g cream cheese, softened
  • ⅓ cup cream
  • 195g crumbled Gorgonzola cheese
  • 2 tbpn chopped fresh chives
  • 3 tbpn chopped walnuts

To serve:

  • Vegetable crudités
  • Grape clusters

Method:

Cook chopped bacon in a skillet over medium-high heat 10 minutes or until crisp. Drain bacon, and set aside. Add minced garlic to skillet, and sauté 1 minute.

Beat cream cheese at medium speed with an electric mixer until smooth. Add cream, beating until combined. Stir in bacon, garlic, gorgonzola cheese, and chives. Spoon mixture evenly into an oven proof dish.

Bake at 350° for 15 minutes or until golden and bubbly.

Sprinkle evenly with chopped walnuts, and serve with chopped vegetable crudités and grape clusters.

TIP:

This deliciously decadent dip can be made ahead of time. Simply pop it into the oven to heat once your guests have arrived.

It could also be used as a dressing over steamed seasonal vegetables.
