One of my favourites, the ultimate (almost) carb free healthy dish of all time!
Plus the kids love to build their own.
SERVES 4
Ingredients:
- 1 tbsp olive oil
- 1 Yellow Onion (diced)
- 20cm knob of Ginger (peeled and grated)
- 2 Garlic (cloves, minced)
- 500 g Turkey Mince
- 2 tbsp Tamari
- ½ tspn Sesame Oil
- Pinch Sea Salt
- Black Pepper
To serve:
- 2 Baby Cos Lettuce (peeled apart into leaves and washed)
- 3 stalks Green Onion (chopped)
- 1 small carrot julienned (or grated)
- 20 g Peanuts chopped (optional)
- Fresh Chilli deseeded and sliced
- 1 Lime (sliced into wedges)
Optional extras:
- Avocado, tomato and cucumber (diced)
Method:
Heat olive oil in a large frying pan over medium heat.
Add in the onions, ginger, sea salt and pepper and sauté for about 5 minutes or until the onion is translucent.
Add in the garlic and sauté for another minute.
Add in the ground turkey and break it up as it cooks. Once it is cooked through and browned, add in the tamari. Continue to sauté until it is absorbed. Remove from heat. Add sesame oil.
To serve spoon the turkey mixture into the centre of a lettuce leaf and top with green onion, carrots, other veggies (avocado, tomato and cucumber) and peanuts. Squeeze a lime wedge overtop, wrap and enjoy!
TIP:
I love to make a double batch of the turkey mince and freeze half. It makes a deliciously quick week night meal which is healthy and fun.
