Indulgent flavour meets wholesome ingredients in these easy, no-bake, healthy millionaire shortbread bites. Gluten-free, dairy-free, and made with just a few simple ingredients!
SERVES 8-10 bites
Ingredients:
For the Base (Cookie Dough Layer):
- ½ cup ground almonds (almond flour works too)
- 3 tbsp peanut butter (natural and unsweetened)
- 2 tbsp maple syrup
- (Optional) 1 tbsp vanilla protein powder
For the Caramel Layer:

4–6 Medjool dates, halved and pitted
For the Chocolate Topping:
- ½ cup chocolate chips (dairy-free if needed)
Method:
Step 1: Melt the Chocolate Place the chocolate chips in a heatproof bowl over a saucepan with about 2 inches of water. Gently heat on low, stirring occasionally, until the chocolate is fully melted. Remove from heat and set aside.
Step 2: Make the Cookie Dough Layer In a medium bowl, stir together the ground almonds, peanut butter, maple syrup, and protein powder (if using) until a soft dough forms.
Step 3: Assemble the Bites Press a spoonful of the dough mixture into silicone molds or a mini muffin tray, filling each about ⅓ full. Press half a date into each base layer.
Step 4: Add the Chocolate Layer Spoon melted chocolate over each date layer, smoothing the top so it’s evenly covered.
Step 5: Chill and Set Transfer to the fridge or freezer and chill until the chocolate is set—around 30 minutes in the freezer or 1 hour in the fridge.
