These cookies are delicious nutritious treats. They are packed with healthy fibre, protein and essential fats from nuts and seeds to nourish you and keep you full. They make a satisfying snack post-workout or in between meals.
MAKES APPROX 16 COOKIES
Ingredients:
- ¼ cup Brazil nuts
- ¼ cup of chia seeds
- ¼ cup pumpkin seeds
- ¼ cup walnuts
- ¼ cup hemp seeds
- ¼ cup goji berries
- ½ cup almond flour
- 1 cup unsweetened coconut flakes
- 1 tbsp ground flaxseed
- 1 tsp cinnamon
- 1 tsp baking powder
- ⅓ tsp salt
- 3 ripe bananas
- ¼ cup coconut oil, melted
Method:
Preheat oven to 180ºC (350ºF). Line a tray with baking paper.
Place brazil, walnuts and pumpkin seeds into a blender and pulse blitz until the nuts are broken down into pieces (don’t over blitz and make into a powder).
Pour crushed nuts and seeds into a large mixing bowl. Add almond flour, hemp seeds, goji berries, shredded coconut, ground flaxseed, cinnamon, baking powder, and salt.
Peel the ripe bananas and add to the blender with the melted coconut oil, blitz until smooth.
Pour wet ingredients into dry and stir to combine.
Place spoonfuls of mixture onto a baking sheet.
Bake for 15 minutes or until golden brown.
Cool on a wire rack.
TIP:
These cookies will keep for several days when stored in the fridge……if they last that long :)
I always have a stash of frozen ripe bananas in the freezer – they are great for recipes and smoothies!
