Do you love Moroccan flavours?
This rich and fragrant chicken tagine is one of our favourites. It is packed with complex flavours and spices of the middle east.
SERVES 6
Ingredients:
- 5 cloves crushed garlic
- ½ tspn ground ginger
- 1 tspn sweet paprika
- ½ tspn ground cumin
- 1 tspn turmeric
- Pinch of salt and freshly cracked pepper
- 8 chicken pieces
- 2 tbsp extra virgin olive oil
- 3 medium onions, sliced thin
- 1 cinnamon stick
- 12 calamata olives, pitted and halved
- 3 small preserved lemons
- 1 cup chicken stock
- ½ lemon juiced
- 1 tbsp chopped flat-leaf parsley (to serve)
Method:
Mix garlic, ginger, paprika, cumin, turmeric, salt and pepper together. Rub chicken with mixture, cover, refrigerate and marinate 3 to 4 hours.
Heat oil in heavy frying pan. Add chicken, and brown on all sides. Remove to platter. Add onions to pan, and cook over medium-low heat about 15 minutes, until lightly browned. Add cinnamon stick.
Place the chicken on onions, scatter with olives. Remove the pulp from the preserved lemons, and cut skin in strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken.
Cover pan with tagine lid or pan lid. Place over low heat, and cook about 30 minutes, until chicken is done.
Scatter parsley on top and serve with couscous.
